Healthy Bran Muffin

These are healthy, low fat, and low sugar:

mix dry in bowl:

  • 1 cup organic spelt flour
  • 2 cups organic bran flakes
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 cup organic rolled oats
  • 1/4 cup unsweetened shredded coconut

mix wet in bowl:

  • 1 cup rice, coconut, hemp, or almond milk (unsweetened)
  • 1 egg
  • 1/4 cup molasses (add 1/2 cup if you like sweeter)
  • 3 tablespoons organic apple sauce
  • 2 tablespoons coconut oil (melted)
  • 1 teaspoon organic vanilla

after you mix the wet and dry together in 1 bowl and it’s blended well, then add your fruit:

1/2 cup of either raisins or blueberries (fresh or frozen-thawed)

Oven preheated to 375

Bake for approx 20 mins.  (use toothpick to check)

Yields 8 muffins or 6 oversized muffins
