Protein Pancakes – Flax, Banana, oats, etc.


In blender/vitamix/magic bullet/ninja (organic ingredients):

These are a great pre hike or workout meal as they supply you with a ton of energy.

  • 1 1/2 cup rolled oats
  • 1 cup almond or rice or coconut milk
  • 1 tbsp ground or whole seed flax
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 banana or 1/2 cup unsweetened pumpkin puree
  • 1 scoop plain or vanilla protein powder
  • cinnamon to taste

optional:  after batter is mixed in blender add:  either 1/4 cup of either shredded coconut, walnuts, or fresh/frozen berries for more flavor, then pour into non stick skillet or griddle.  Yields 4 – 6inch pancakes
