Low Fat Granola

Healthy low-fat granola: (use organic ingredients):

  • 2 cup rolled oats
  • ½ cup sliced almonds
  • ½ cup shredded coconut
  • 1 tsp. cinnamon
  • 1 tsp. pure vanilla extract
  • ½ cup apple juice
  • ¼ cup maple syrup
  • 1 tbsp of coconut oil (melted)
  • 1/4 cup wheat germ (optional)
  • 1-2 tbsp whole flax seeds (optional)
  • ¼ to ½ cup dried fruit of choice (black currants, blueberries, raisins, cranberries, whatever you prefer)

Mix dry ingredients in 1 bowl, then mix wet ingredients together in 1 bowl. Then add wet to dry and mix well by hand. Spread out evenly on cookie sheet.

Bake @ 375 degrees for 10 minutes, then mix with spatula for even browning.  Keep baking in 5 minute increments, as it gets golden quickly towards the end, remove when it’s reached desired golden brown color and crunchiness.   Total will be about 20-30 mins.

NOTE: every 5-10 mins turn the outside ends toward the middle with a spatula, so that the middle cooks as much as the sides, if not the sides will get too brown, this is the labor intensive part.
