Chia Pudding

Chia Pudding (use organic ingredients):

  • 1 cup raw cashews
  • 1 cup almond milk
  • 1 cup water
  • 1/2 cup shelled hemp seeds
  • 1/4 cup coconut sugar
  • 1/4 tsp sea salt
  • 1 tsp pure vanilla extract
  • 1 tablespoon cacao nibs
  • 1/4 cup extra virgin coconut oil (melted)
  • 2 tablespoons chia seeds
  • 1/2 teaspoon ceylon cinnamon.

Soak cashews for 4 to 6 hours, then rinse and set aside.

Melt coconut oil on lowest heat stovetop in a stainless steel measuring cup.

Put soaked cashews, water, almond milk, hemp seeds, coconut sugar, salt, vanilla extract, chia seeds in high speed blender until creamy consistency.

Put blender on low speed, then pour in coconut oil until mixed.

Place mixture in a few small glasses (see photo), ramekins, or glass container, but make sure to seal the top.

Place in refrigerator overnight.  Perfect on-the-go breakfast or mid meal snack.

Optional: top with berries before serving
