Low Fat Banana Walnut Muffins

Low fat banana walnut muffins (use organic ingredients):

  • 1¾ cup organic spelt flour (optional: mix a blend of 50/50 brown rice flour and spelt flour, to make it lower in gluten)
  • ½ tsp sea salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ cup dark brown sugar or coconut palm sugar (or NO sugar at all if banana’s are fully ripe and brown)
  • 1 egg
  • 1/4 cup of coconut oil (melted)
  • ½ cup of plain organic low fat yogurt
  • 1 tsp pure vanilla extract
  • 2 very ripe brown bananas, mashed
  • 1/2 cup almond, coconut, hemp, or rice milk (unsweetened)
  • ½ cup walnut pieces (add after batter is fully mixed together)

Mix wet ingredients in one bowl.  Mix dry ingredients in another bowl. Then mix wet into dry. Mix thoroughly.

Add nuts last, mix through.

Preheat the oven to 375 degrees. Makes 6-8 muffins.

Bake for 20-22 minutes or until golden brown, use toothpick as tester.
